Crispy Oven Breakfast Potatoes
Breakfast potatoes are an easy oven-roasted side dish made with red potatoes, bell peppers, onion, garlic, and a simple savory seasoning blend. High heat gives the potatoes crisp browned edges while the centers stay soft and fluffy.

How to Get Breakfast Potatoes Crispy
- Cut potatoes into evenly sized pieces

- Toss during roasting so multiple sides brown

Ingredient Notes
Red potatoes hold their shape well, but Yukon Gold potatoes also work. Bell peppers and onion add sweetness as they roast. A combination of olive oil and a little melted butter gives both crispness and richer flavor.
How to Make Breakfast Potatoes
Toss the potatoes, peppers, onion, and garlic with oil, melted butter, seasoned salt, cayenne, salt, and black pepper. Spread them over a large sheet pan and roast at 425°F, tossing a few times. Increase the heat at the end until the edges are crisp and brown.
Variations
Add mushrooms, zucchini, spinach, or chopped chicken sausage. For an air-fryer version, cook in batches at 400°F and shake the basket several times.

Method
- Preheat oven to 425°F.
- Toss potatoes, garlic, onion, peppers, oil, butter, seasoned salt, cayenne, salt, and pepper together.
- Spread over a large rimmed baking sheet in a single layer.
- Roast 25 minutes, tossing twice. Increase oven to 500°F or broil and cook 10 to 15 minutes more until crisp and browned.
