Honey Balsamic Roasted Carrots

Balsamic roasted carrots turn a simple vegetable into a glossy, caramelized side dish with honey, balsamic vinegar, rosemary, and thyme. Roasting at high heat concentrates the carrots’ natural sweetness while the vinegar keeps the glaze balanced and savory.

This easy side works with chicken, steak, salmon, or holiday dinners. It would pair especially well with our air fryer chicken tenders for a simple family meal.

Why Roasting Works

A hot oven evaporates surface moisture and encourages browning. Keeping the carrots in a single layer is important; crowded carrots steam instead of caramelizing.

Ingredient Notes

Use similar-size carrots so they finish at the same time. Balsamic vinegar adds acidity and depth, honey helps the glaze caramelize, and rosemary and thyme add a fresh savory finish.

How to Make Balsamic Roasted Carrots

Halve the carrots lengthwise, toss with olive oil, balsamic vinegar, honey, salt, and pepper, then roast at 425°F. Turn them halfway through cooking, add the herbs, and continue roasting until tender and caramelized.

Make Ahead

Peel and cut the carrots a day ahead. For the best texture, roast them shortly before serving. Leftovers reheat well in a hot oven or air fryer.

Honey Balsamic Roasted Carrots

Ingredients
  

  • 2 lb carrots peeled and halved lengthwise
  • 1 1/2 tbsp olive oil
  • 1 1/2 tbsp balsamic vinegar
  • 2 tbsp honey divided
  • 3/4 tsp kosher salt
  • 1/4 tsp black pepper
  • 1 tsp fresh rosemary chopped
  • 1/2 tsp dried thyme

Method
 

  1. Preheat oven to 425°F.
  2. Toss carrots with olive oil, balsamic vinegar, half the honey, salt, and pepper. Arrange in a single layer.
  3. Roast 20 minutes, then turn the carrots.
  4. Drizzle with remaining honey, rosemary, and thyme. Roast 15 to 25 minutes more until tender and caramelized.

Notes

Avoid crowding the pan so the carrots roast instead of steam.
