How to Make Balsamic Roasted Carrots
Halve the carrots lengthwise, toss with olive oil, balsamic vinegar, honey, salt, and pepper, then roast at 425°F. Turn them halfway through cooking, add the herbs, and continue roasting until tender and caramelized.
Make Ahead
Peel and cut the carrots a day ahead. For the best texture, roast them shortly before serving. Leftovers reheat well in a hot oven or air fryer.

Ingredients
Method
- Preheat oven to 425°F.
- Toss carrots with olive oil, balsamic vinegar, half the honey, salt, and pepper. Arrange in a single layer.
- Roast 20 minutes, then turn the carrots.
- Drizzle with remaining honey, rosemary, and thyme. Roast 15 to 25 minutes more until tender and caramelized.
