Crispy Make-Ahead Freezer Waffles

Ingredients
  

  • 1 1/2 cups all-purpose flour
  • 1/4 cup cornstarch
  • 2 tbsp granulated sugar
  • 2 tsp baking powder
  • 1/4 tsp fine salt
  • 1 1/4 cups milk
  • 5 tbsp neutral oil plus more for the waffle iron
  • 2 large eggs separated
  • 1 tsp vanilla extract

Method
 

  1. Whisk flour, cornstarch, sugar, baking powder, and salt in a large bowl.
  2. In a second bowl, whisk milk, oil, egg yolks, and vanilla. Stir into the dry ingredients just until combined.
  3. Beat the egg whites to soft peaks, then gently fold them into the batter.
  4. Cook in a preheated, lightly greased waffle iron until lightly golden. Transfer waffles to a wire rack to cool.
  5. Freeze completely cooled waffles in a freezer-safe bag. Reheat from frozen in a toaster, air fryer, or 350°F oven until crisp.

Notes

For freezer waffles, cook them a shade lighter than you would for immediate serving so they do not overbrown when reheated.
