Stir together the tzatziki first so the flavors have time to blend. Mix and shape the turkey meatballs gently, then cook in the air fryer or oven until they reach 165°F. Divide rice among bowls and top with meatballs, cucumber, tomatoes, hummus, tzatziki, feta, and parsley.

Method
- Stir together all tzatziki ingredients and refrigerate.
- Mix turkey, panko, egg, mint, garlic, coriander, oregano, cumin, salt, and pepper. Shape into 12 meatballs.
- Air fry at 400°F for 8 to 10 minutes, turning halfway, until meatballs reach 165°F. Or bake at 375°F for about 15 minutes.
- Divide rice into bowls and top with meatballs, cucumber, tomatoes, hummus, tzatziki, feta, and parsley.
