How to Make Mediterranean Meatball Bowls

Stir together the tzatziki first so the flavors have time to blend. Mix and shape the turkey meatballs gently, then cook in the air fryer or oven until they reach 165°F. Divide rice among bowls and top with meatballs, cucumber, tomatoes, hummus, tzatziki, feta, and parsley.

Meal Prep Tips

Store the cooked rice and meatballs separately from the cold vegetables and sauces. Reheat only the rice and meatballs, then add the fresh toppings just before eating.

Ingredients
  

Meatballs
  • 1 lb ground turkey
  • 2/3 cup panko breadcrumbs
  • 1 large egg
  • 1/4 cup fresh mint chopped
  • 3 cloves garlic minced
  • 2 tsp ground coriander
  • 1 tsp dried oregano
  • 1 tsp ground cumin
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
Tzatziki
  • 1/2 cup plain Greek yogurt
  • 1 clove garlic minced
  • 1/4 tsp dried dill
  • 1 tbsp lemon juice
  • salt and pepper to taste
Bowls
  • 2 cups cooked rice
  • 1/2 English cucumber chopped
  • 1 cup cherry tomatoes halved
  • 1/2 cup hummus
  • 1/4 cup feta cheese crumbled
  • fresh parsley for serving

Method
 

  1. Stir together all tzatziki ingredients and refrigerate.
  2. Mix turkey, panko, egg, mint, garlic, coriander, oregano, cumin, salt, and pepper. Shape into 12 meatballs.
  3. Air fry at 400°F for 8 to 10 minutes, turning halfway, until meatballs reach 165°F. Or bake at 375°F for about 15 minutes.
  4. Divide rice into bowls and top with meatballs, cucumber, tomatoes, hummus, tzatziki, feta, and parsley.

Notes

Raw or cooked meatballs can be frozen for up to 3 months.
